Bruiser's Covington Construction 2026 — January Through March Update

We have been quiet on the blog — but Bruiser's Covington construction 2026 has been anything but quiet. Since the start of the year we have been on site almost every day, and the progress has been real. We have been documenting every step of the Bruiser's Covington construction 2026 journey on Facebook, TikTok, and Instagram, and the response from the Covington and Northshore community has been incredible. For anyone who missed it, here is the full story of what has happened at 1614N North Columbia St, Covington, LA as we build Bruiser's The Hot Dog Place from the ground up.

Bruiser's Covington Construction 2026 Begins — Two Possums and a Shed

Construction Day 1 began with something nobody planned for. We cleaned out the shed on the property to store equipment and supplies — and found two possums living inside. They were safely relocated and we got to work. That first video captured exactly the kind of real, unfiltered journey we wanted to share, and the response told us locals were ready to follow along.

Early site work moved quickly. Boring crews got our pipe in, a temporary electrical pole went up, and temporary water was connected. Cleco showed up as a surprise visitor to hook up the temporary power pole. We started clearing the site for the parking lot and the machines got to work.

None of this would be possible without the support of American Bank and our SBA loan relationship. Their partnership has been a cornerstone of this project from day one. As we always say — a strong foundation matters in every sense, from level floors to solid banking relationships.

Demo Days — Bruiser's Covington Construction 2026 Takes Shape

Demo Day 1 was a milestone. QC Services handled the demolition work professionally and efficiently, and we cannot recommend them enough for anyone needing a reliable demo crew. We removed brick stairs, a carport, and years of brush growth over several demo days.

One of the best surprises of the entire build came during demo — we uncovered the original true-cut timber in the rafters and ceiling. It is beautiful, it is original, and we are planning to keep it exposed as part of the final design. On one of the lighter demo days it was just Kevin and Melissa carefully trying to save the original Hardie board siding. That old material is delicate and cracks easily, so it was slow, patient work. Not every day is glamorous, but every day matters.

House Leveling With Academy House Leveling

Before we could move forward, the building had to be leveled. Brent and his crew at Academy House Leveling did an outstanding job — professional, thorough, and detail-oriented from start to finish.

After leveling we discovered the subfloor was rough and about half of it would need to be replaced. The good news: the joists were solid. That was a moment of genuine relief. We had the framer come in to brace the structure properly before anything came up — because doing it right matters more than doing it fast.

The Subfloor Party — Community Showed Up Big

This was one of the most memorable weekends of the entire Bruiser's Covington construction 2026 project. We put the call out asking for volunteers to help rip out the old subfloor and install new 3/4 inch plywood. The response blew us away. AFD donated the plywood. American Bank and Kimberly Shirley showed up with pizza and water for everyone who came out. Customers, family, and friends gave up their weekend to swing hammers alongside us.

We are learning as we go with a lot of this build. But when your community shows up the way ours did, the learning curve gets a whole lot easier. We are truly blessed to be building this in Covington.

Returning the Favor — Magnolia Casework Warehouse Clean-Out

David with Magnolia Casework was one of the people who helped during our subfloor party. When he needed help clearing out the old Poole Lumber Co. warehouse at 621 E Rutland St in Covington, we organized a community clean-out day. Volunteers got first dibs on everything before the public sale. That is what community looks like — you show up for the people who showed up for you.

26 Parking Spots — No More Parking Problems

For anyone who remembers the parking situation at our Slidell location — this one is for you. The new Covington location now has 26 dedicated parking spots. No more circling the block, no more creative parking solutions. Twenty-six spots, properly built, properly marked. Our customers deserve that, and we are glad to finally deliver it. Big thanks to American Bank for supporting this build — strong partnerships make things like this possible.

Foundation, Deck Footings, and Grease Trap

Foundation Day 1 brought a full crew and a Lowe's delivery truck that got stuck on site — because construction always has a surprise waiting. We are forming up the footings for a 1,000 square foot deck that will be a major part of the finished space. Seeing those forms go in made everything feel more permanent.

The 500-gallon grease trap required by the City of Covington has been delivered and is ready to be installed. Every piece of this puzzle has to come together at the right time, and this one is checked off the list.

What's Next — Bruiser's Covington Construction 2026 Spring Update

Bruiser's Covington construction 2026 is moving fast. The space is taking shape and every week brings new milestones, new challenges, and new moments that remind us why we started this in the first place. We are still targeting a Spring/Summer 2026 opening at 1614N North Columbia St in Covington, LA.
